Grape variety and winemaking

Champagne Extra Brut Équilibre – Legret & Fils
A blend of Pinot Meunier (approx. 40%), Pinot Noir (30%) and Chardonnay (30%), from vineyards cultivated according to the principles of biodynamics in the Talus-Saint-Prix area, in the Marne. After fermentation, the wine rests for a long time on the lees in the bottle, with an Extra Brut dosage that keeps the sip taut and mineral, enhancing the notes of citrus, green apple, brioche and almond.

Chianti Classico Castello di Albola DOCG 2023 – 4 Leoni Label
Produced on the hills of Radda in Chianti, it is mainly made from Sangiovese grapes with a share of Canaiolo, harvested and selected by hand. Fermentation takes place in steel with maceration on the skins; this is followed by an aging of about 12 months in Slavonian oak barrels, which gives balance between freshness, tannin and fruity and floral notes typical of Chianti Classico. Since the recent vintage, the estate has been converted to organic.

Mormoreto 2021 Toscana IGT – Frescobaldi
Iconic wine of Castello di Nipozzano, it is a blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, with a prevalence of Cabernet. It ages for about 24 months in oak barrels, partly new and partly second-passage, and then a few months in the bottle. In the glass it is intense ruby red, with a complex bouquet of red fruits, blackberry, currant, notes of date and fig, floral accents, spices, cocoa, coffee and tobacco, supported by velvety tannins and a long persistence.
