Description
Wai (“Welcome” in Thai), a sur lie sparkling wine produced by an age-old method (Pinot Noir and Riesling) whose exuberant aromas are intriguing. Brut Wai comes from the hills of Oltrepò Pavese: the Belvedere Estate, a small but interesting area of 9 hectares under biodynamic cultivation. It is a single vineyard in triangular form of Riesling and Pinot Noir. Golden yellow with sediment in suspension and abundant fine perlage. Nose: exuberant, with notes of brewer’s yeast accompanied by hints of golden drop plum and aromatic herbs. In the mouth it offers a pleasant perlage matched with great freshness and sapidity that make for an agreeable and unchallenging taste. The finish is long lasting, recalling traces of yeast.
