The Vino Asinone is produced by the Poliziano Estate from vines of the same name after careful selection. The grapes used are 90% Sangiovese and 10% Colorino and Merlot. The harvest is doneby hand in crates. Fermentation is in stainless steel vats with subsequent maturing for 18 months in casks of French oak. A brilliant ruby red, intense nose of red and black cherries. On the palate rich, full and intense. A complex red with velvety tannins and lingering persistence. Pairing with
matured cheeses, game and red meats in general advised.
